Who doesn’t want to do something special for their significant other on Valentine’s Day? It doesn’t have to be huge or expensive — just a little something that shows you care. Well, skip the jewelry and forget the flowers, because all you need is CHOCOLATE!

Chocolate cakes cooked in mugs are just the dessert to cap off a date night. They’re terrific because a) they’re super fast to prepare, and b) you’re not stuck with a bunch of leftovers. (What’s more tempting than waking up to leftover cake?!) Make a dynamic duo of chocolate cakes, perfectly portioned and ready in minutes. The fact that these babies are low in calories is just an added bonus to how delicious they are. Happy Valentine’s Day!

Hungry Girl’s Chocolate Cake Mugs for TwoMakes 2 servings

6 tbsp. moist-style devil’s food cake mix2 tbsp. egg whites or fat-free liquid egg substitute2 tbsp. light sour cream¼ tsp. baking powder2 tsp. semi-sweet mini chocolate chips2 tbsp. powdered sugar (not packed)1 tsp. light vanilla soymilk, unsweetened vanilla almond milk, or fat-free milk

1.Spray two microwave-safe mugs with nonstick spray. Evenly divide the following ingredients between them: cake mix, egg whites/substitute, sour cream, and baking powder. Add 2 tbsp. water to each mug, and mix until uniform. Stir 1/2 tsp. chocolate chips into each mug.

2.Microwave one mug for 1 minute and 45 seconds, or until set. Repeat with the second mug.

3.While the second mug cooks, immediately run a knife along the edges to help separate the first cake from its mug. Firmly place a plate over the mug, and flip so that the plate is on the bottom. Gently shake mug to release cake onto the plate. Once cooked, repeat with the second mug.

4.Let cool completely, about 15 minutes.

5.In a small bowl, combine powdered sugar with milk, and stir until smooth. Drizzle over cooled cakes, and top each with 1/2 tsp. of the remaining chocolate chips. Serve with two forks!
